Carluccio's is one of my favourite chain restaurants. The decor is beautiful and the food full of fresh italian flavours and lots of mozzarella! I also love the giant pile of raspberry and chocolate meringues they have in their window display, and bought one for dessert!</div>

Crumble your meringue into three bowls.<br />
Drizzle with the cream. Spoon a few teaspoons of jam into each bowl, and finally sprinkle over a few berries. I used raspberries and blueberries as they were what we had in the fridge! Raspberry's are my favourite fruit so we usually have a punnet of them to hanging round.<br />

The meringues were crisp on the outside and soft and sticky in the middle! Just as they should be. The only problem was they didn't really taste like raspberry which was a little disappointing!<br />

I love cake. I love sweet things. Ok I love food in general but sweet things in particular :) As you can see most of the recipes I post tend to be of the sweet variety! I don't usually bake cakes though, but yesterday I had a day off work and decided to try my hand at some cupcakes as a little afternoon treat :)</div>

Mix together the dry ingredients and butter using a electric hand whisk. In a separate jug, mix the egg milk and vanilla paste. Gently combine with the dry ingredients and beat until well combined.</div>

Spoon into cupcake cases (this makes 12 cakes) and bake on gas mark 3 for 20 minutes or until a cocktail stick comes out clean when inserted into the cake.</div>

Beat the icing sugar and soft butter until well combined, You may need a tiny drop of milk to help blend together. Add the vanilla paste and food colouring. I used a ultra violet purple food colouring gel from Tesco. It was quite weak so I needed to use quite a bit even to get a faint purple tone.</div>

Spread over the cakes once they are cooled. I topped mine with fresh blackberries and silver edible balls. :)</div>

I made this lovely creamy dessert the other day using a plastic rabbit shaped jelly mould. The mould almost worked, all but the ear in fact! But the taste definitely made up for the shaping!</div>

<u>Method:</u></div>

Gently heat the milk cream and sugar in a pan, continuously stirring. Meanwhile soak your gelatine leaves in cold water in a separate bowl. Add the vanilla paste to the cream. Take the warm cream off the heat and add the gelatine leaves. Stir until they have dissolved into the cream.</div>

Lightly grease the pudding mould with sunflower oil (I didn't do this step and regretted it as the mould didn't work as well as i'd hoped - so I recommend you do do it!) Pour the mixture into the mould and refrigerate for at least 2 hours!</div>

I made a little blueberry and raspberry coulis to drizzle over the rabbit! </div>

Gently simmer the fruit with some sugar until most of the fruit has broken down, but there are still fruit with shape. Leave to cool and drizzle over the rabbit!</div>

I've just finished picking the first proper crop from the mangetout plants in our garden.<br />
They are deliciously sweet and it feels so good to know Scott and I have grown them from scratch!</div>

I love the swirly vines that the peas use to cling on with. They curl themselves around the bamboo support and this helps the plant grow healthily upright and stay strong.<br />

The other day I went fruit picking (again) with Scott. Scott's Nana Hazel, was kind enough to let us raid her supply of gooseberries and red currents from her garden. It feels so good being able to pick your own fruit, there is definitely something very caveman like about searching for your own food and then eating it!</div>

We used the gooseberries to make a yummy crumble! And the red-currents we ate straight up, and I used the leftovers to make some other desserts look pretty by laying them over the top!</div>

The colour of the gooseberries was so rich compared to the pale green variety you get in the supermarket. They were already nice and sweet so didn't need as much sugar adding to them as the store bought kind do.<br />

I made a gooseberry crumble, and then a few days later used the left over gooseberries with some frozen berries from Lidl and made another one! Crumble is definitely a food obsession at the moment, I just cant get enough of it!<br />

In Greece you generally are served with a slab of feta on top of your salad, whereas in Britain the feta is usually crumbed on top or cut into cubes! Here I crumbled ours but that would be up to you!</div>

Crumble the feta over the top of the salad, and drizzle the extra Virgin olive oil over the top. Top with a little dried herbs (oregano) and some vinegar if you like!</div>

A quick and easy thing to have under your belt is homemade garlic bread! It's something I don't think i'd really buy again now unless I really had to, as this recipe is so easy and tasty. It always impresses people when you say you've made it yourself (even though its not fully homemade) and adds a little something special to an everyday meal.<br />

1 loaf crusty bread e.g ciabatta, french stick</div>

125g butter</div>
<div style="text-align: center;">
2-3 cloves crushed garlic</div>
<div style="text-align: center;">
a few leaves of basil or parsley</div>

Slice your loaf the way garlic bread looks, with even slices going about 3/4 of the way deep. Or slice the ciabatta in half length ways for extra easy-ness!<br />
Melt the butter in a bowl until soft but not melted. Add the crushed garlic cloves. Chop the herb of your choice and add to the butter mixture.<br />
Spoon the mixture into the gaps of the garlic bread or spread along both halves.<br />
You could now top with a little parmesan or mozzarella to make cheesey garlic bread!<br />
Bake in the oven for 5-10 minutes on high, or until the bread has lightly coloured, the butter melted, and the cheese golden (if your using cheese).<br />

Homemade lemonade is a real treat and so fresh and delicious compared to bought cordial. It's really simple to make and isn't too costly!<br />
Scott made a delicious batch recently so we've been enjoying the benefits while the weathers been good (even though it looks likes its changed now!!)<br />

The zest of 3 lemons grated finely</div>

<u>Method:</u></div>

Dissolve the sugar with the litre of water and the lemon juice. Simmer gently for for a few minutes. Add the lemon zest and the citric acid. The citric acid makes the lemon flavour 'pop' and I think it also helps preserve the cordial for longer, though i'm not 100% sure about that. If you haven't got any its not too dramatic to leave it out! It still tastes amazing :)</div>

Simmer for another minute or so, then strain the mixture through a sieve or a piece of muslin is you have some.</div>

Place in a sterilised bottle and once opened, keep in the fridge! </div>

The drink is best served 2/3 cordial:water.</div>

Tiramisu is one of Scott's favourite desserts so I always feel a bit of pressure when making this particular pudding! But this is a simple quick and easy version for when you have some cream left over in the fridge.</div>

Soak the lady fingers on a plate with the sweetened coffee.</div>

Place 1 and a bit lady fingers in the bottom of the cup.</div>

Layer a teaspoon of Nutella on top of the lady fingers. </div>

Drizzle over a litte more of the coffee mixture,</div>

You could keep repeating these layers if you had a taller glass but you'd obviously have to adjust the ingredient quantity.</div>

Now whip the cream with the icing sugar until it is thick but not over whipped.</div>

Spoon over the top of the puddings.</div>

<span style="font-family: Times, Times New Roman, serif;">Place the strawberries, sugar and lemon juice in a heavy bottomed pan. I used the Cruset which worked really well! Simmer gently until all the sugar has dissolved, and then bring the jam to the boil testing every ten minutes or so to see if its set. Heres a tip: Place a saucer in the freezer an hour before you make the jam. Then when you think the jam is set place a teaspoon of the jam onto the cold saucer. Push the jam on the saucer with your finger. If the jam wrinkles you know it has set and is ready to put into jars. If not keep boiling and checking every 8 minutes or so. </span></div>

Peel your banana and slice it in half lengthways. I lined my grill with aluminium foil to prevent the honey dripping. Place the bananas on the foil and drizzle a teaspoon of honey on each side of the banana.</div>

Grill on high for 5 or so minutes, or until the honey has caramelised and the bananas are soft and gooey.</div>

I've recently tried the new Pimm's flavour 'blackberry and elderflower'. I must say, I really wasn't impressed. I'm not the biggest alcohol drinker out there, but I do like a Pimms in the summer! This Pimm's however was very artificial tasting, and didn't remotely taste like the fruit on the label! The colour is magnificent though, a rich purply pink thats look even better when diluted with a little lemonade. We had ours served with fresh lemon slices and strawberries, and a lot of ice too!</div>

The gooseberries Scott and I picked from the pick your own field came in handy for crumble time! I've recently planted a gooseberry push that I bought from Lidl but that wont be ready until at least next year, so until then its back to the pick your own! :)</div>

The great thing about frozen berries is that you can have them in your fridge for the times when you havn't got fresh fruit and you want to make a crumble, or when you have a fruit that you don't want to use on its own! They're also really good when blitzed in the food processor with yoghurt and honey to make a sort of instant ice cream.</div>

Put your gooseberries in a pan with the sugar and simmer until soft. Add the berries once the gooseberries are soft. Cook for another minute then pour the fruit into your crumble dish.</div>

Rub the butter and flour together until they resemble fine bread crumbs. Add your sugar to the the flour/butter mixture. Sprinkle over the fruit, make sure you don't press it down as this will effect the texture. Cook on gas mark 6 for about 20 minutes or until the crumble is lightly brown and the fruit is bubbling at the edges.</div>

I like Coffee shops. The problem is, I don't like coffee. Starbucks is by far superior in the drinks department, though costa in my opinion wins based on cakes. Starbucks cakes are horrifically artificial and dry, yet Costa have an interesting selection of giant teacakes, tiffin, linzer biscuits and giant bourbon biscuits. The drinks I find are really sickly and synthetic though, I recently had the strawberry lemonade which was way too sweet, and for me to say that it must be bad! We tried a raspberry and orange ice drink which was better than the lemonade, but still a little too sweet! Starbucks cool lime refresher, frappacinos etc are really tasty and can generally be tailored to your tastes which I like. I do find myself walking into Costa to get a cake, and then back to Starbucks for my drink and to sit down (and awkwardly try to eat my costa cake).<br />

Spread a thick layer of jam onto your flan dish. This helps take the edge of as it can sometimes be a little dry! Whip your cream along with the icing sugar until your have a thick but not overwhipped consistency. Spread this on to of the jammy flan. Chop your strawberries and scatter them over the cream. If your using raspberries or blueberries you dont have to chop them just sprinkle them all over!</div>

There is something extra special about picking your own fruit, I think it would be great to encourage children who are not really a fan of fruit to actually eat more as there really is a big novelty of seeing them grow, picking them and eating them. I thinks it's standard to say you eat more fruit than you put i your basket... which justifies the price of picking your own! We used to have a massive field full of pick your own strawberries but sadly it no longer exists and we have to travel slightly further afield. If your local the pick your own nearest us is near on the Aberwheiler/Bodfari road. You can't miss the signs (a giant strawberry) and its a really fun afternoon out.</div>

Scott and I were lucky enough to book a last minute holiday to Cyprus in early July. We booked it a week before for a really low price! So it was a lovely unexpected time that we had together after i'd finished my first year in University.</div>

We spent most of our time eating, and traveling round the neighbouring towns on our hired quad bike and enjoying some much needed quality time together. We stayed in Agia Nappa (pause for reaction) which was actually a lot better than we had first anticipated. The weather was scorching, and once you stray from the touristy club side of the town, it is a really lovely place to go. I must say Malia, crete is a lot more picturesque, and also easier to find the old style town, but Agia Nappa did have a lot to offer too.</div>

Of course we ate humous.... But have you ever tried humous and honey? We hadn't, but on our last night we found ourselves picking from the leftovers in the fridge one night (as we stayed self catering) and found that the two work together a treat! </div>

We found a beautiful area on the quad bike with the most inviting coloured waters, so inviting that Scott and I jumped into them from a rocky cliffside... after carefully observing the local cypriots doing so of course. </div>

We visited the Water world Theme Park which is the largest themed water world park in Europe. It was a little expensive (€35 each) but well worth going for the day! We took a disposable waterproof camera with us to take snaps like these.</div>

We had a lovely homemade waffle dessert with Nutella and white chocolate praline topped with vanilla ice cream. I find in a lot of European countries they tend to not be so great with dessert, much to my dismay yet they do offer waffles and pancakes in a lot of the restaurants which in this case tempted us, though we were good and shared! This was more because we had eaten possibly the largest Greek Salad ever and were pretty full up! </div>

<span style="text-align: left;">In Cyprus they tend to call a Greek Salad a Village Salad so if your ever in Cyprus don't be confused because they are essentially the same thing! Both consisting of chunks of feta, juicy tomatoes, b</span><span style="text-align: left;">lack olives, cucumber, chopped onions and green peppers. We found a hermit crab in the harbour. Do you know how awkward it is to take a picture of a living hermit crab? Very. It kept crawling in and out unexpectedly every time I got the camera out but I eventually snapped a picture of the little guy before we plopped him back into the sea.</div>

This was our bike. I have to say it has really made the difference to both our holidays as it just gives you that extra freedom to explore and get away from the crowds. The fuel is really cheap which is great, though it isn't as cheap for the actuall hire, but like I said before, it's very worth the money!</div>

We had carbonara for tea one night which was very rich and delicious. The only problem was that we couldn't find any decent fresh cream in the supermarket! They only had cooking cream (whatever that is meant to be) so we used that and it seemed to do the trick! I know it sound lame, but supermarket shopping, especially abroad really excites me. I love choosing the food i'm going to cook with for the week and seeing all the weird and wonderful products they have to offer!</div>

Our wonderfully stylish footwear... maybe not... but we do need something waterproof for paddling in the sea so these are very practical. Did you know I was a footwear design student? We had beetroot salad in one of the tavernas and I have to say it was brilliant. Beetroot mixed with Greek yoghurt, honey and balsamic vinegar. Really worth trying if you get the chance, or even want to make yourself!</div>

I started gardening a few years ago now, just a few new experiments here and there, and as you can guess, I mainly grew food! I think flowers are beautiful and all, but theres just something more rewarding about growing vegetables from scratch, harvesting them and of course eating them!</div>

This year Scott and I have made two new vegetable plots (I will post about these soon) where we have grown radishes, mange tout, carrots, beetroot, salad, courgettes and strawberries. </div>

I am particularly pleased with the radishes as they grew very quickly and were a gorgeous rich red colour with a sweet and peppery taste. Another success was the salad, by far the easiest crop we have grown. Once you've picked the salad it quickly regrows meaning you have fresh salad all summer long! Which has been perfect to accompany all the BBQ'S we've been having in this glorious weather.</div>

Here are the raddishes with their leaves and roots before we prepared them. We found the raddishes rarely made it into a salad as everyone kept popping them into their mouths as soon as they were picked as they were so tasty! I imagine they would be great with a chunk of cheese and some bread, but we chopped them up along with the salad we grew and some crumbled feta for a quick and easy salad.</div>

If you are a starting gardener i'd highly recommend trying out radishes as all our seeds germinated and and carried on growing with little effort until they were ready to eat! All we did was water them and watch as they grew :)</div>
